Prepare the Pork Ribs

In a bowl, mix the soy sauce, honey, minced garlic, grated ginger, Szechuan peppercorns, and black pepper. Rub this mixture all over the pork ribs and let marinate for at least 1 hour, preferably overnight.

Smoke the Pork Ribs

Preheat your smoker to 225°F (107°C) and add Kiawe wood chips. Place the marinated pork ribs in the smoker and smoke for about 4 hours until tender.

Sear the Shrimp

Heat a cast-iron skillet over high heat. Toss the shrimp with olive oil, salt, and pepper. Sear the shrimp for 2-3 minutes on each side until they turn pink and slightly charred.

Make the Sauce

In a bowl, combine ketchup, wasabi paste, lemon juice, Worcestershire sauce, and salt. Mix well and adjust seasoning to taste.

Plate the Dish

Serve the smoked pork ribs alongside the seared shrimp. Drizzle the wasabi cocktail sauce over the shrimp and garnish with sesame seeds and chopped chives.
