Beef Short Ribs Preparation

Sear the Ribs

Preheat the oven to 325°F (165°C). Season the beef short ribs with salt and black pepper. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the ribs on all sides until browned, about 3-4 minutes per side. Remove from pot and set aside.

Make the Glaze

In the same pot, combine honey, Dijon mustard, and minced garlic. Stir well and bring to a simmer.

Braise the Ribs

Return the short ribs to the pot. Pour in beef broth and add fresh thyme. Bring to a boil, then cover and transfer to the oven. Cook for 2.5 to 3 hours, until tender.

Prepare the Cream Mixture

In a saucepan, heat heavy cream over medium heat. Stir in salt, black pepper, and nutmeg. Allow to simmer for 5 minutes.

Layer the Potatoes

In a greased baking dish, layer the sliced potatoes. Pour the cream mixture over the potatoes, and sprinkle with gruyere, cheddar, and parmesan cheese.

Bake

Cover with foil and bake in the oven at 350°F (175°C) for 45 minutes. Remove foil and bake for an additional 15 minutes until golden and bubbly.

Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add sliced carrots and green beans. Sauté for 5-7 minutes until tender. Season with salt and black pepper to taste.
