Mochi Preparation

Make the Mochi

In a bowl, mix sweet rice flour, water, and sugar until well combined. Microwave the mixture for 1 minute, stir, and then microwave for another minute. Dust a surface with cornstarch, transfer the mochi to it, and cut into small pieces.

Azuki Bean Preparation

Cook the Azuki Beans

Rinse the azuki beans and place them in a pot with water. Boil for 30 minutes, drain, add fresh water, and simmer until tender. Sweeten with sugar and let cool.

Ube Flan Preparation

Prepare Ube Flan

Blend eggs, condensed milk, evaporated milk, and ube extract until smooth. Pour into a baking dish and steam for 30 minutes or until set. Let cool and refrigerate.

Assembly

Assemble the Halo Halo

In a serving bowl, layer the cooked azuki beans, mini mochi, diced mango, and strawberries. Add scoops of pineapple coconut ice cream, strawberry ice, and mango ice. Top with ube flan pieces and drizzle with condensed milk.
