Coconut Crème Brûlée

Method
Prepare the Coconut Crème Brûlée
Preheat the Oven
Preheat your oven to 150°C (300°F).
Mix Ingredients
In a saucepan, combine coconut milk, heavy cream, granulated sugar, and a pinch of salt. Heat over medium until the mixture is warm and sugar is dissolved.
Whisk Egg Yolks
In a mixing bowl, whisk together the egg yolks and vanilla extract until smooth.
Combine Mixtures
Slowly pour the warm coconut mixture into the egg yolks, whisking continuously to prevent curdling.
Strain and Pour
Strain the mixture through a fine mesh sieve into ramekins. Place the ramekins in a baking dish.
Bake
Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 40-45 minutes, until set but still slightly jiggly in the center.
Cool and Chill
Remove ramekins from the water bath and let cool to room temperature. Refrigerate for at least 4 hours or overnight.
Brûlée the Top
Caramelize Sugar
Before serving, sprinkle a thin layer of brown sugar on top of each chilled crème brûlée. Using a kitchen torch, caramelize the sugar until it forms a crispy crust.
Serve with Fresh Berries
Plate the Dish
Serve the coconut crème brûlée topped with mixed fresh berries and garnish with mint leaves.
