Cake Preparation

Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients

In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Wet Ingredients

In another bowl, beat the eggs, then add milk, oil, and vanilla. Mix well.

Combine Mixtures

Gradually add the wet mixture to the dry mixture, mixing until just combined. Carefully stir in the boiling water until smooth.

Bake the Cake

Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cake

Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Toffee Mousse Preparation

Melt Chocolate

In a microwave-safe bowl, melt the semi-sweet chocolate chips and butter together in 30-second intervals until smooth. Allow to cool slightly.

Whip Cream

In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

Prepare Egg Mixture

In a saucepan, whisk together egg yolks, sugar, and vanilla. Cook over low heat until the mixture thickens, about 5 minutes. Remove from heat and combine with the melted chocolate.

Combine Mixtures

Gently fold the whipped cream into the chocolate and egg mixture until fully incorporated.

Chill Mousse

Cover and refrigerate the mousse for at least 2 hours until set.

Assembly

Layer the Cake

Once the cakes are cooled, place one layer on a serving plate. Spread a generous layer of toffee mousse on top.

Add Second Layer and Mousse

Place the second layer on top and cover the entire cake with the remaining toffee mousse.

Add Toppings

Decorate the top with fresh berries, raspberry puree, chocolate sauce, and dollops of whipped cream.
