Method

Chocolate Cake Preparation

Preheat the Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

Mix Dry Ingredients

In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Wet Ingredients

Add eggs, milk, oil, and vanilla extract to the dry ingredients and mix until well combined.

Add Boiling Water

Carefully stir in the boiling water until the batter is smooth (the batter will be thin).

Bake the Cake

Divide the batter evenly between the prepared pans and bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cakes

Let the cakes cool in the pans for 10 minutes, then remove and cool completely on wire racks.

Cook the Raspberries

In a saucepan, combine raspberries, sugar, and lemon juice over medium heat. Cook until the raspberries break down and the mixture thickens, about 10 minutes.

Blend and Strain

Blend the mixture until smooth and strain through a fine sieve to remove seeds. Let cool.

Assembly

Layer the Cake

Place one cake layer on a plate, spread some raspberry coulis on top, then add the second layer.

Frost and Garnish

Frost the top and sides of the cake with your choice of frosting, then drizzle with additional raspberry coulis and garnish with fresh strawberries, blueberries, and mint leaves.
