Method

Preparation of Beef Short Ribs

Season the Ribs

Preheat your oven to 300°F (150°C). Season the beef short ribs generously with salt and black pepper.

Sear the Ribs

In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove from skillet and set aside.

Make the Honey Mustard Glaze

In a bowl, combine honey, Dijon mustard, minced garlic, and fresh thyme.

Coat the Ribs

Brush the honey mustard glaze generously over the seared short ribs.

Bake the Ribs

Place the glazed ribs back in the skillet, add the beef stock, cover with foil, and bake in the preheated oven for 2.5 to 3 hours or until tender.

Demi-Glace Preparation

Prepare the Demi-Glace

In a saucepan, combine red wine, beef stock, bay leaves, and fresh rosemary. Bring to a boil and then reduce heat to low. Simmer for about 30 minutes until reduced by half.

Mix the Ingredients

In a bowl, combine diced tomatoes, chopped green onions, lime juice, and salt. Mix well and set aside to let the flavors meld.

Once the ribs are cooked, serve them on a plate with a drizzle of demi-glace and a side of Kunia Lomi Tomato.
