Preparing the Mango Lime Relish

Make the Relish

In a bowl, combine diced mango, red bell pepper, red onion, lime juice, cilantro, and minced jalapeño. Season with salt to taste and mix gently. Set aside.

Cooking the Thai Coconut Rice

Cook the Rice

Rinse jasmine rice under cold water until water runs clear. In a medium saucepan, combine rinsed rice, coconut milk, water, and salt. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed. Fluff with a fork.

Cooking the Scallops

Sear the Scallops

Heat olive oil in a large skillet over medium-high heat. Season scallops with sea salt and black pepper. Once the oil is hot, add scallops and sear for about 2-3 minutes on each side until they are golden brown and opaque. Remove from heat.

Serving

Plate the Dish

On a plate, serve a portion of Thai coconut rice topped with seared scallops. Spoon mango lime relish over the scallops. Enjoy!
