Cheesecake Preparation

Prepare the Oven

Preheat your oven to 200°C (400°F). Line a 9-inch springform pan with parchment paper.

Mix the Ingredients

In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Then mix in the heavy cream, vanilla extract, and flour until fully combined.

Bake the Cheesecake

Pour the cheesecake mixture into the prepared springform pan and bake for 50-60 minutes until the top is browned and the center is set but slightly jiggly.

Cool the Cheesecake

Turn off the oven and leave the cheesecake inside for an hour. Then remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.

Prepare the Toppings

In a bowl, toss the mixed berries with honey. Whip the cream until soft peaks form.

Slice the chilled cheesecake and serve topped with the honeyed mixed berries, a dollop of whipped cream, and a dusting of matcha powder.
