Prepare the marinade

In a shallow bowl or resealable bag, whisk together 2 tbs olive oil, 1 tbs lime juice, 1 tbs hot sauce, 1 tsp minced chipotle, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp ground cumin, 1 tsp salt and 1/2 tsp black pepper until combined.

Marinate the chicken

Add the 2 chicken breasts to the marinade, ensuring they are evenly coated. Marinate at room temperature for 15 minutes or refrigerate for up to 2 hours for more flavor.

Grill the chicken

Preheat a grill pan or outdoor grill over medium-high heat. Lightly brush the grill or pan with 1 tsp butter or oil. Grill the marinated chicken breasts 4-6 minutes per side (internal temp 165°F / 74°C) until cooked through and charred at the edges. Remove from heat and let rest 5 minutes.

Chill the chicken

Slice the rested chicken breasts thinly across the grain. Arrange slices on a tray in a single layer, cover, and refrigerate until chilled, at least 30 minutes. Chilling is important for a cool packaged meal.

Prepare the bread and spread

Slice the multigrain baguette lengthwise. Mix 2 tsp mayonnaise with 1 tsp sriracha to make a spicy spread. Spread evenly on both cut sides of the baguette.

Assemble the sandwich

Place 2 slices of pepper jack cheese on the bottom half of the baguette. Arrange chilled grilled chicken slices on top of the cheese in a single layer (use all slices as needed). Top the chicken with 1 cup baby mixed greens and tomato slices from 1 tomato. Season lightly with a pinch of salt and a grind of black pepper if desired. Close the sandwich.

Portion and wrap

Cut the baguette into serving portions (typically 1 long sub yields 2 smaller subs; this recipe yields about 2 servings). Wrap each sub tightly in plastic wrap or parchment to keep chilled and intact. Label with contents and chill.

Chips

Include one sealed individual bag of potato chips alongside the wrapped sandwich in the package. Place the chip bag so it won't be crushed (use an insulated insert or compartment).

Place one wrapped chocolate chip cookie in the meal pack in a separate compartment or protected pouch so it remains intact and doesn't contact chilled items.

Packaging / Finish

Arrange the wrapped sandwich, chip bag, and cookie in the meal container. Add a refrigeration gel pack near the sandwich (not directly on the bread) and include an insulated insert if available. Keep the pack refrigerated and deliver or store at 40°F (4°C) or below. Best consumed within 24 hours for quality; consume within 48 hours if stored properly.
