Prepare the Vanilla Base

In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar is dissolved and the mixture is warm but not boiling.

Infuse Vanilla Flavor

Split the vanilla bean lengthwise and scrape the seeds into the milk mixture. Add the empty pod as well. Stir to combine and remove from heat. Let it steep for about 15 minutes.

Whisk Egg Yolks

In a separate bowl, whisk the egg yolks until they are pale and slightly thickened.

Temper the Egg Yolks

Slowly pour a little of the warm milk mixture into the egg yolks while whisking constantly to temper them. Then gradually add the tempered yolks back into the saucepan with the remaining milk mixture.

Cook the Mixture

Return the saucepan to low heat and cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.

Chill the Mixture

Remove from heat and strain the mixture through a fine-mesh sieve to remove the vanilla pod and any coagulated egg. Stir in a pinch of salt. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.

Churn the Gelato

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Freeze

Transfer the gelato to an airtight container and freeze for at least 2 hours before serving for a firmer texture.
