Make simple syrup
In a small saucepan combine 2 cups water and 1 cup granulated sugar. Warm over medium heat, stirring occasionally, until the sugar fully dissolves and the liquid is clear (about 4–6 minutes). Do not boil vigorously. Remove from heat and let the syrup cool slightly (5–10 minutes).
Add flavor and tequila: Stir 1 cup fresh lime juice, 1 tablespoon lime zest, 1/4 teaspoon fine sea salt and 1/2 cup blanco tequila into the warm-but-not-hot simple syrup. Taste and adjust: the mixture should be bright and slightly boozy; add up to 1–2 tablespoons more tequila if desired (note extra alcohol will slow freezing).
Chill: Transfer the mixture to a shallow container, cover, and refrigerate until completely cold (at least 1 hour, preferably 2). Chilling ensures faster, finer ice crystals when freezing.
Freeze using ice cream maker (preferred): Pour the chilled mixture into an ice cream maker and churn according to manufacturer instructions until it reaches a soft, granular sorbet-like texture (about 20–30 minutes). Transfer to a shallow airtight container and freeze for 1–2 hours more to firm up to scoopable nieve consistency.
Freeze without an ice cream maker (still good): Pour chilled mixture into a shallow metal or glass pan and place in the freezer. Every 30 minutes for the first 2–3 hours, use a fork to scrape and break up the forming ice crystals, creating a granular, nieve texture. Continue until evenly frozen and scoopable (4–6 hours total).
Crema de Tequila (Tequila Cream)
Combine cream base: In a medium bowl, whisk together 1 cup heavy cream and 1/2 cup dulce de leche or sweetened condensed milk until smooth and slightly thickened (about 30–60 seconds). If using dulce de leche that is thick, warm it slightly to loosen before whisking.
Flavor the cream: Whisk in 2 teaspoons orange liqueur, 1 tablespoon blanco tequila, 1/2 teaspoon vanilla extract, 1/8 teaspoon ground cinnamon, and 1/16 teaspoon fine sea salt until fully incorporated. Taste and adjust sweetness or alcohol level lightly; the crema should be pourable but slightly thick and emulsified.
Chill: Cover and refrigerate the crema for at least 20–30 minutes so flavors marry and the texture firms slightly. If you prefer a thicker cream, whip the mixture briefly (10–20 seconds) with a hand whisk or electric mixer to add body, but do not overwhip to avoid turning it into whipped cream.
Assembly & Garnish
Prepare glasses and rim (optional): If using a sugared rim, rub a lime wedge around the rim of serving glasses and dip into coarse sugar or cinnamon-sugar. Place glasses in the freezer to chill briefly while finalizing.
Scoop nieve: Using a fork or ice cream scoop, break up and scoop the tequila-lime nieve into chilled serving glasses or small bowls, filling about two-thirds full.
Top with crema: Spoon or drizzle 2–3 tablespoons of the crema de tequila over each serving of nieve. For a more indulgent presentation, add a dollop (3–4 tablespoons).
Garnish and serve: Sprinkle 1/2 tablespoon toasted chopped almonds or pecans over each serving if using. Add a lime wedge on the rim. Serve immediately so the nieve retains a granular, slushy texture while the crema remains cold and pourable.
Storage: Leftover nieve can be stored in an airtight container in the freezer; thaw slightly and scrape with a fork before serving. Crema keeps refrigerated for up to 3 days; stir before using.
