Preheat the oven to 375°F (190°C). Wipe each mushroom cap with a damp paper towel to remove dirt. Gently twist and pull stems from caps; reserve stems for the filling. Place caps hollow-side up on a baking sheet lined with parchment or lightly oiled.

Sweat aromatics
Heat a skillet over medium heat and add 2 tbs butter and 1 tbs olive oil. When butter is melted and hot, add the minced onion and a pinch of salt. Cook, stirring occasionally, until the onion is translucent, about 4–5 minutes. Add the minced garlic and chopped mushroom stems and cook another 4–5 minutes, until the mushroom bits have released their moisture and most of the liquid has evaporated.

Toast breadcrumbs
Add 3/4 cup breadcrumbs to the pan and stir to combine. Cook for 1–2 minutes to toast the crumbs lightly; this helps absorb moisture and gives texture.

Combine with cheeses and herbs
Transfer the pan mixture to a medium bowl to cool slightly (2–3 minutes). Add 4 oz softened cream cheese, 1/2 cup grated Parmesan, 2 tbs chopped parsley, 1 tsp thyme, 1/2 tsp lemon zest, 1/4 tsp red pepper flakes, 1/2 tsp salt, and 1/4 tsp black pepper. Mix thoroughly until a cohesive, scoopable filling forms. Taste and adjust seasoning if needed.

Spoon filling into the mushroom caps using a small spoon or piping bag for neatness, mounding slightly. You should have enough filling for about 16 caps. If using, sprinkle the 1/2 cup grated mozzarella or extra Parmesan over the tops for a melty finish.

Place the baking sheet in the preheated oven and bake at 375°F (190°C) for 15–18 minutes, until filling is set and cheese is golden and bubbly. Rotate the pan halfway through for even browning.
