Olive Relish (muffuletta salad)

    Prepare olives and vegetables

    Chop the pitted green olives and Kalamata olives by hand or pulse briefly in a food processor until coarsely chopped (aim for small uniform pieces, not a paste). Transfer to a mixing bowl. Finely chop the pepperoncini (or banana peppers), rinse and drain the capers and add them. Add the minced garlic, finely minced red onion, and chopped parsley to the bowl.

    Dress the relish

    Whisk together the red wine vinegar, extra-virgin olive oil, dried oregano, salt, and black pepper in a small bowl. Pour the dressing over the olive mixture and mix thoroughly until evenly combined. Taste and adjust seasoning—add a little more vinegar for brightness or a pinch more salt if needed.

    Marinate

    Cover and refrigerate the relish at least 1 hour (ideally 2–4 hours or overnight) to let flavors meld. Bring to cool room temperature before assembling sandwich if refrigerated.

    If using a whole round loaf, slice horizontally through the center to create a top and bottom (like a cake). If your loaf is very tall you can remove some crumb to create room for fillings. Lightly brush the cut interior faces with olive oil or melted butter to help keep the bread from getting soggy and to add flavor.

    Optional: For a slightly toasted crust, place both halves, cut-side up, under a broiler or in a 350°F (175°C) oven for 4–6 minutes until just firm and lightly golden. Let cool before assembling.

Meats & Cheeses

    Layer meats and cheeses on the bottom half of the loaf in this order for even distribution and structural stability: spread a thin layer of softened butter over the bottom interior if using. Next, arrange half the provolone slices in an even layer to cover the bread. Follow with the sliced salami in an overlapping pattern, then the mortadella, then the ham. Add the remaining provolone and top with the mozzarella/fontina slices. If using tomatoes, place thin slices on top of the cheese layer.

    Press down gently on the assembled sandwich so the layers knit together; you can weight it with a heavy cutting board for 10–15 minutes for a more compact sandwich, or proceed directly to finishing.

Assembly & Finish

    Spoon the olive relish evenly over the cheese layer, spreading it edge to edge. Use as much relish as you like — traditional muffuletta has a generous layer. Place the top half of the bread over the relish and press down firmly to compress the sandwich. If you weighted the sandwich previously remove the weight now.

    Wrap the assembled muffuletta tightly in plastic wrap and refrigerate for at least 30 minutes to 1 hour to allow flavors to meld and make slicing easier. For best results refrigerate 2–4 hours or overnight.

    To serve, unwrap and use a serrated bread knife to cut the round into wedges (6–8 pieces depending on loaf size). Serve at room temperature or slightly chilled. Leftovers keep well refrigerated for 3–4 days; keep extra relish separate if you want to maintain bread texture.
