Prepare Glass

Salt the rim
Run the lime wedge around the rim of a chilled coupe or rocks glass. Rub the wet rim into the coarse salt placed on a small plate to coat. Set the glass aside.
Mix the Cocktail

Dry shake (if using egg white)
If using egg white for a silky foam, add the tequila, Cointreau (or triple sec), fresh lime juice, agave syrup, and the 1/2 egg white to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and build foam.

Wet shake
Add the ice to the shaker (about 6 cubes). Shake again vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted. If not using egg white, combine all liquid ingredients with ice and shake 12–15 seconds.

Strain
Double-strain the cocktail into the prepared glass using a Hawthorne and fine mesh strainer (or a julep strainer) to remove small ice shards and any large egg-white solids. For a rocks-style margarita, serve over fresh ice; for a classic 'up' serve, strain into the chilled glass without ice.
