Wings & Basic Seasoning

Prep and dry
Pat the chicken wings completely dry with paper towels. Removing surface moisture helps them crisp when baked.

Toss with oil and baking powder
Place wings in a large bowl. Add 1 tablespoon neutral oil and 1 tablespoon baking powder. Toss until evenly coated; the baking powder helps crisp the skin in the oven.

Season
Add kosher salt (1 tsp), black pepper (1 tsp), garlic powder (1 tsp), onion powder (1 tsp), and smoked paprika (1 tsp) to the wings. Toss thoroughly to distribute seasonings evenly over all pieces.

Arrange for baking
Preheat oven to 425°F (220°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top. Arrange wings in a single layer on the rack with space between pieces for air circulation.

Bake
Bake on the middle rack for 25 minutes. After 25 minutes, flip each wing and continue baking for another 15–20 minutes, until internal temperature reaches 165°F (74°C) and skin is deep golden and crisp. Total bake time about 40–45 minutes depending on size.

Hot (Buffalo) sauce
While wings finish baking, melt 3 tablespoons unsalted butter in a small saucepan over low heat. Add 1/2 cup hot sauce and 1 tablespoon honey. Whisk until combined and warmed through. Taste and adjust heat or sweetness as desired. Keep warm until ready to toss.

Roasted Garlic BBQ
Gently warm 1/2 cup roasted garlic BBQ sauce in a small saucepan over low heat until simmering, stirring occasionally. If sauce is very thick, add 1 tablespoon water to loosen. Keep warm.

Teriyaki
In a small saucepan combine 1/2 cup teriyaki sauce, 1 teaspoon grated fresh ginger and 1/2 teaspoon sesame oil. Bring to a low simmer for 1–2 minutes to meld flavors. Remove from heat. Optionally stir in 1 teaspoon toasted sesame seeds for garnish.

Plain / Tossing
If 'plain' wings are requested, skip saucing and serve straight from the oven. For sauced wings, place baked wings in a large clean bowl and pour the chosen warm sauce over them. Toss vigorously for 30–60 seconds so each piece is evenly coated. Return to the baking sheet and place back in oven for 2–3 minutes if you want the sauce set, or serve immediately for a saucier finish.

Prepare dips and garnish
Place ranch and blue cheese dressing into small serving bowls. Trim celery into sticks if using. Sprinkle chopped fresh parsley over wings if desired.

Plate and serve
Arrange wings on a platter with celery sticks and the two dressings. Label or tell guests which sauce was used (Hot, Roasted Garlic BBQ, Teriyaki, or Plain). Serve immediately while hot and crisp.
