    Prepare Shrimp

    Pat the shrimp dry with paper towels. In a bowl, season shrimp with kosher salt, black pepper and smoked paprika. If you want a slightly crisper exterior, toss the seasoned shrimp with the 2 tablespoons of flour or cornstarch until lightly coated; shake off excess.

    Heat Pan

    Place a large skillet (10–12-inch) over medium-high heat. Add the 2 tablespoons olive oil and let it heat until shimmering but not smoking (about 1–2 minutes).

    Sear Shrimp

    Add shrimp in a single layer, making sure not to overcrowd the pan (cook in two batches if necessary). Sear shrimp 1.5–2 minutes on the first side until pink at the edges and lightly browned underneath, then flip and cook another 1–1.5 minutes until just opaque. Transfer shrimp to a plate and set aside. Do not overcook.

    Build Sauce

    Reduce heat to medium. Add the 2 tablespoons butter to the same skillet. When melted, add the minced garlic and red pepper flakes. Sauté, stirring constantly, about 30–45 seconds until fragrant and just beginning to color (do not burn).

    Deglaze & Finish

    Pour in the 1/4 cup dry white wine (or chicken stock) to deglaze the pan, scraping up any browned bits with a wooden spoon. Let the liquid reduce by about half (about 1–2 minutes). Stir in the lemon juice and lemon zest, then add the reserved shrimp back to the skillet. Toss to coat and warm through for 30–60 seconds.

    Finish & Serve

    Remove from heat and stir in the chopped parsley and the optional teaspoon of finishing olive oil. Taste and adjust seasoning with more salt, pepper, or lemon as desired. Transfer to a serving plate and serve immediately with lemon wedges.
