    Preheat and measure

    Position a rack in the center of the oven and preheat to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Measure and have all ingredients at hand; soften butter to room temperature (should give slightly when pressed). If using nuts, roughly chop and measure.

    In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the softened unsalted butter, granulated sugar, and packed light brown sugar. Beat on medium speed for 2–3 minutes until the mixture is pale and fluffy and the sugars are fully incorporated, scraping down the bowl once.

    Add the eggs, one at a time, mixing on low speed after each addition until incorporated. Add the vanilla extract and mix until combined. Scrape down the bowl to ensure even mixing.

    In a separate bowl, whisk together the all-purpose flour, baking soda, and fine sea salt until evenly distributed.

    With the mixer on low speed, gradually add the flour mixture to the butter-sugar-egg mixture in two additions, mixing just until no streaks of flour remain. Avoid overmixing to keep cookies tender.

    Use a rubber spatula to fold in the semisweet chocolate chips and optional chopped nuts until evenly distributed throughout the dough.

    Portion the dough

    Use a 1.5 tablespoon cookie scoop (about 32–36g) or a heaping tablespoon to portion dough into uniform balls. Place them on the prepared baking sheets, leaving about 2 inches (5 cm) between each to allow for spread. For slightly thicker cookies, chill the scooped dough on the baking sheet for 20–30 minutes.

    Optional flattening

    If you prefer a slightly flatter cookie, gently press each dough ball with the palm of your hand or the bottom of a glass dipped in flour just before baking.

    Bake

    Bake one sheet at a time on the center rack for 10–12 minutes, rotating the sheet halfway through baking for even color. Cookies should be golden at the edges and still soft in the center—the residual heat will finish them. Bake 11 minutes for a balance of chewy center and crisp edges.

    Finish with salt

    As soon as cookies come out of the oven, sprinkle a small pinch (about 1/8–1/4 tsp per dozen) of flaky sea salt on top if desired.

    Allow cookies to cool on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely. Store cooled cookies in an airtight container at room temperature for up to 5 days.
