Prepare chicken
Pound the chicken breasts to even thickness (about 1/2 inch) using a meat mallet or rolling pin inside a zip bag. Pat dry with paper towels. Season both sides with 1 tsp salt and 1/2 tsp black pepper, rubbing in 1 tablespoon olive oil to coat.

Cook chicken
Heat a large skillet or grill pan over medium-high heat. Add 1 tablespoon olive oil. When shimmering, add the chicken and cook 4–6 minutes per side (depending on thickness) until a thermometer reads 165°F (74°C) and the exterior is golden. Remove to a plate and rest 5 minutes, then slice thinly against the grain.

Prepare lettuce and assemble base
While the chicken rests, wash and dry the Romaine thoroughly. Chop or tear into bite-size pieces and place in a large salad bowl. Add 1 1/2 cups croutons and 1/2 cup freshly grated Parmesan. Drizzle remaining 1 tablespoon olive oil and squeeze juice of half the lemon over the greens, toss lightly to coat.

Finish salad
Place sliced chicken on top of the tossed Romaine. Reserve extra Parmesan for serving.

Combine flavor base
In a medium bowl, mash the 3 minced anchovy fillets and 2 minced garlic cloves together with the back of a spoon or a fork until a paste forms. This mellows the garlic and distributes the anchovy flavor evenly.

Mix dressing
Add 1/2 cup mayonnaise, 1/4 cup Greek yogurt, 1 tsp Dijon, 1 tsp Worcestershire sauce, 2 tablespoons lemon juice, 2 tablespoons extra-virgin olive oil, 2 tablespoons grated Parmesan, 1/4 tsp salt and 1/4 tsp black pepper to the anchovy-garlic paste. Whisk vigorously until smooth and slightly thick. Taste and adjust acidity with additional lemon juice or salt as needed.

Dress the salad
Toss 3/4 of the dressing with the Romaine, croutons and Parmesan in the salad bowl until evenly coated. Add more dressing on individual plates as desired. Top with sliced chicken and a final sprinkle of grated Parmesan and freshly ground black pepper. Serve immediately.
