    Prepare and preheat

    Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment; grease parchment and dust lightly with cocoa powder.

    Dry ingredients

    In a large bowl, whisk together the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt until evenly combined.

    Wet ingredients

    In a separate bowl, whisk the eggs, buttermilk, vegetable oil, and vanilla until smooth.

    Combine batter

    Pour the wet ingredients into the dry ingredients and stir until just combined. Slowly add the hot coffee and mix until the batter is smooth and thin. Scrape down the bowl so no dry pockets remain.

    Bake

    Divide batter evenly between the prepared pans. Bake on the middle rack for 22–28 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter). Rotate pans halfway through for even baking.

    Cool

    Allow cakes to cool in pans for 10 minutes, then run a knife around edges, invert onto cooling racks, remove parchment, and cool completely (about 1 hour) before assembling so caramel doesn't run.

Caramel Filling

    Toast pecans (optional step placed here for timing)

    In a small skillet over medium heat, melt 1 tsp butter. Add pecan halves and toast, stirring frequently, until fragrant and lightly browned, 4–6 minutes. Transfer to a plate to cool. (Pecans will also be used as topping.)

    Make a basic stovetop caramel

    In a medium heavy-bottomed saucepan over medium heat, add 1/4 cup granulated sugar in an even layer. Without stirring, let sugar melt and begin to caramelize; when edges brown, gently swirl the pan or use a heatproof spatula to encourage even melting until amber. Watch carefully to avoid burning.

    Finish caramel sauce

    Once the sugar reaches an amber color, reduce heat to low and carefully whisk in 1/2 cup (1 stick) butter in pieces until melted, then whisk in 1/4 cup light brown sugar and 1/4 cup heavy cream. Bring to a gentle simmer and cook 1–2 minutes until smooth. Remove from heat, stir in 1/4 tsp sea salt and 1/2 tsp vanilla. If you prefer a thicker caramel to layer, simmer 1–2 minutes longer; for slightly runnier caramel, remove sooner. Let cool 10–15 minutes until slightly thickened but still pourable.

    Optional prep note

    If you prefer a simpler method, you can microwave 3/4 cup light brown sugar + 1/2 cup heavy cream + 4 tbsp butter in a microwave-safe bowl, heat in 30-second increments, stirring between, until smooth, then add salt and vanilla. Cool as above.

Chocolate Glaze

    Warm cream

    Place 1/2 cup heavy cream in a small saucepan and heat just until it begins to steam and simmer—do not boil.

    Make ganache

    Place 8 oz semisweet chocolate chips in a heatproof bowl. Pour the hot cream over the chocolate and let sit 1 minute, then whisk until smooth. Add 2 tbsp butter and 1 tsp light corn syrup (if using) and whisk until glossy and fully combined. Keep warm or reheat gently if it firms up before assembly.

Assembly & Topping

    Level and split layers

    If top domes formed, level each cake with a serrated knife. If cakes are very thick and you want more layers, carefully slice each round horizontally to create four even layers (optional).

    Fill with caramel

    Place one cake layer on a serving plate or cake board. Spoon or pour a generous layer (about 1/3–1/2 cup) of the warm-but-not-hot caramel onto the cake, spreading to the edges but leaving a small border so caramel doesn't spill when adding the next layer. If using more layers, repeat, keeping caramel in central layers as desired. Reserve ~2–3 tablespoons of caramel for drizzling on top.

    Crumb coat and chill

    If desired, apply a thin layer of ganache as a crumb coat: pour a few tablespoons around the top and sides and spread thinly to catch crumbs. Chill the cake 10–15 minutes to set the crumb coat.

    Final glaze

    Place the cake on a wire rack set over a tray. Pour the warm ganache over the top, starting in the center and allowing it to flow over the sides to fully enrobe the cake. Use an offset spatula to smooth the top and encourage even drips if needed.

    Add pecans and caramel drizzle

    While ganache is still tacky, arrange the toasted pecan halves around the top of the cake or scatter them as desired. Warm the reserved caramel slightly if needed and drizzle over the top. Finish with a light sprinkle of coarse sea salt to enhance the caramel-chocolate balance.

    Set and serve

    Let the cake sit at room temperature until the ganache sets (20–30 minutes) or refrigerate 10–15 minutes for quicker setting. If chilled, let sit 10–15 minutes before slicing for cleaner cuts. Serve slices with extra caramel on the side if desired.
