    Prepare flavor base

    Place the minced anchovy fillets and minced garlic in a medium bowl. Use the back of a spoon to mash them into a paste. This helps disperse the anchovy flavor evenly through the dressing.

    Emulsify

    Add the 2 egg yolks, Dijon mustard, Worcestershire sauce, and lemon juice to the anchovy-garlic paste. Whisk vigorously until combined and slightly thickened.

    Slowly add oil

    While whisking constantly, add the extra-virgin olive oil very slowly in a thin steady stream to start the emulsion. Once it begins to thicken and emulsify, you can add the neutral oil in a slightly faster stream. Continue whisking until the dressing is thick and glossy (about 2–3 minutes).

    Finish and season

    Whisk in the grated Parmesan, 1 tsp salt, and 1 tsp freshly ground black pepper. Taste and adjust acidity with more lemon juice or seasoning as needed. If the dressing is too thick, thin with 1–2 teaspoons of water or lemon juice.

    Preheat and toss

    Preheat the oven to 400°F (200°C). Toss the bread cubes with 3 tablespoons olive oil, 1/2 teaspoon minced garlic (from the clove), 1 tsp salt, and 1 tsp freshly ground black pepper until evenly coated.

    Bake

    Spread the cubes in a single layer on a baking sheet. Bake for 10–12 minutes, stirring once halfway through, until golden-brown and crisp. Watch closely to prevent burning.

    Garlic rub (optional)

    When the croutons come out of the oven, while still warm, rub them lightly with the cut half of the reserved garlic clove for an extra hint of garlic flavor. Let cool completely.

Salad

    Prepare lettuce

    Make sure romaine is well washed and thoroughly dried (a salad spinner works best). Tear into bite-size pieces and place in a large mixing bowl.

    Assemble

    Add about half of the dressing to the lettuce and toss gently but thoroughly to coat. Add more dressing to taste — classic Caesar is lightly coated, not drenched. Add the croutons and 1 tablespoon grated Parmesan and toss once more to combine.

    Divide onto plates or serve family-style. Finish with a final sprinkle of grated Parmesan and freshly ground black pepper. If using, top with sliced grilled chicken. Serve immediately so croutons remain crisp.
