Prep Chicken & Rub

Trim and dry
Pat the chicken pieces dry with paper towels. Trim any excessive fat or loose skin. Place on a tray or large plate.

Season with salt and pepper
Sprinkle the kosher salt and freshly ground black pepper evenly over all chicken pieces, rubbing lightly so they adhere. Let sit 10 minutes at room temperature if time allows.

Make dry rub
In a small bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, ground cumin, and cayenne pepper. Mix until evenly combined.

Apply rub
Rub the dry spice mixture all over the chicken, pressing it into the skin and the nooks. Ensure even coverage. Let chicken rest 15–30 minutes for flavors to penetrate (or refrigerate up to 4 hours uncovered for slightly crisper skin).
Prepare Grill (or Oven)

If using a gas or charcoal grill: set up for two-zone cooking (direct high heat and indirect medium-low heat). Preheat to about 375–400°F (190–205°C) over the hot zone. If using charcoal, bank coals to one side. Oil and clean the grates. If using an oven: preheat to 425°F (220°C) and place a wire rack over a rimmed baking sheet.

Lightly brush chicken pieces with 1 tablespoon vegetable oil to help the rub and prevent sticking.
Cook Chicken

Sear over direct heat
Place chicken skin-side down over direct heat. Sear 3–5 minutes, until skin is nicely browned and releases from the grill grate. Watch for flare-ups; move pieces briefly if necessary.

Finish over indirect heat
Move chicken to the cooler side (indirect heat) skin-side up. Close the lid and cook for 20–30 minutes more, turning once, until the internal temperature reaches 160–165°F (71–74°C) for thighs (carryover heat will bring to 165–170°F). If using an oven, roast on the rack for 25–35 minutes until internal temp is reached.
Sauce and Glaze

Warm and thin sauce
While chicken cooks, combine the BBQ sauce, apple cider vinegar, and honey in a small saucepan. Warm over low heat until slightly thinned and glossy, stirring occasionally (about 3–5 minutes). Keep warm.

Glaze on final cook
When chicken reaches about 155–160°F (68–71°C), start basting with the warmed BBQ sauce. Brush a thin coat on all pieces, close the lid, and cook 3–5 minutes. Turn and baste again, cooking until internal temp reaches 165–170°F (74–77°C) and sauce is tacky and slightly caramelized. Watch carefully to avoid burning the sugars.
