Prepare and Brown

Heat a large heavy skillet or sauté pan over medium-high heat. Add 1 tablespoon neutral oil and let it warm for 30 seconds. Add the finely chopped onion and cook, stirring occasionally, until translucent, about 3–4 minutes. Add the minced garlic and cook 30 seconds more until fragrant.

Add the ground beef to the pan, breaking it up with a spatula. Cook, stirring and breaking into small pieces, until no longer pink and beginning to brown, about 6–8 minutes.

Season and Simmer

Stir in the tomato paste, chili powder, ground cumin, paprika, dried oregano, kosher salt, and black pepper. Mix thoroughly so the spices coat the meat. Pour in 1 cup water, stir to combine, and reduce heat to medium-low. Simmer, uncovered, 8–10 minutes until the mixture thickens slightly. Taste and adjust salt, pepper, or chili powder as needed. Keep warm on the lowest heat, or transfer to a slow cooker on warm for buffet service.

Taco Shells & Chips

If using hard corn shells, warm them in a 350°F (175°C) oven on a baking sheet for 5–8 minutes until crisp and warm. If using soft corn tortillas, wrap stacks of 6 in foil and warm in the oven 6–10 minutes or steam briefly on a skillet until pliable.

Place tortilla chips in bowls or baskets near the salsa for self-service.

Toppings

While the beef cooks, prepare the toppings: shred cheeses if not pre-shredded, finely shred the lettuce, dice the tomatoes and onion, chop the cilantro, and arrange jalapeños and lime wedges in small bowls. Keep toppings chilled until serving.

Place each topping in separate shallow bowls or trays so guests can assemble tacos to their preference. Label spicy items such as jalapeños and hot sauce.

Salsa & Extras

Pour salsa, guacamole, sour cream, and hot sauce into serving bowls. If guacamole is homemade, squeeze a little lime over the surface and press plastic wrap directly on top to minimize browning until serving time.

Arrange the bowls and plates on the buffet line: taco shells/tortillas, warmed seasoned beef in a chafing dish or slow cooker (set to warm), then cheeses, lettuce, tomatoes, onions, cilantro, jalapeños, lime wedges, and finally salsa, guacamole, sour cream, chips, and extra napkins/utensils.

Assembly & Service

Provide serving spoons for each topping and a sturdy spoon or small ladle for the beef. Advise guests to add beef first, then cheese, lettuce, tomatoes, onion, cilantro, and finish with salsa, guacamole, sour cream, and a squeeze of lime. Encourage use of chips with salsa or for scooping taco fillings.

Keep perishable items chilled (on ice under bowls or in refrigerated containers) if the buffet will run longer than 1 hour. Refill as needed and stir the beef occasionally to keep it warm and evenly textured.
