Chill glass (optional)

If you prefer an extra-cold drink, place flute glasses in the freezer for 10–15 minutes or fill them briefly with ice and cold water while you prepare other ingredients. Dump the ice/water before assembling the cocktail.

Prepare orange juice

If using fresh oranges, cut enough oranges (about 3–4 medium oranges for 1 cup of juice) and juice them, then strain through a fine mesh sieve to remove pulp and seeds. Measure 1 cup of juice and keep it chilled.

Assemble the Mimosa

Pour 1/2 cup (half) of chilled orange juice into each chilled champagne flute (if making two servings) OR for one serving use the proportions below: fill the flute about one-third with orange juice (roughly 1/4 to 1/3 cup) and top with chilled Champagne. For the recipe quantities provided (1 cup sparkling, 1 cup OJ) combine equal parts: pour 1 cup orange juice into a pitcher or pour directly into two flutes (1/2 cup per flute), then slowly top each with 1 cup total of chilled Champagne, dividing evenly so each flute is topped to taste. Pour the sparkling wine slowly down the side of the glass to preserve bubbles and avoid overflow.

Garnish and serve

Garnish each flute with an orange twist or a small orange slice on the rim. Serve immediately while still bubbly.
