Prep bread and cheese

Bring the bread and Brown American cheese to room temperature for a few minutes if refrigerated. If using thick slices, trim or slightly flatten bread for even contact. Spread mayonnaise on one outside side of each bread slice (this creates a golden crust similar to butter). If you prefer butter only, spread 1/2 tablespoon butter evenly on the outside of each slice instead and skip the mayonnaise.

Assemble

Place one bread slice mayo/butter-side down on a plate or cutting board. Lay the two slices of Brown American cheese on top, slightly overlapping so cheese covers bread surface. Sprinkle the optional black pepper lightly over the cheese for a subtle bite. Top with the second bread slice, mayo/butter-side up.

Cook

Heat a nonstick or cast-iron skillet over medium-low to medium heat (about 300–325°F / 150–160°C on an electric pan). Once warm, place the sandwich in the skillet. Cook gently for 3–4 minutes until the bottom is golden brown and crisp. Use a spatula to press slightly so the cheese melts evenly. Flip the sandwich and cook the other side 2.5–4 minutes until golden brown and the cheese is fully melted. If the bread is browning too quickly before cheese melts, reduce heat to low and cover the pan with a lid for 1–2 minutes to trap heat and encourage melting.

Finish and serve

Remove the sandwich to a cutting board and let rest 1 minute to allow the cheese to settle. Cut in half diagonally or down the middle. Serve immediately while the cheese is hot and gooey.
