Arrange cheeses
On a separate platter, alternate rows of American and Swiss cheese slices. If desired, roll or fold slices for easier picking. Label platters with cheese types.
Sandwich Buffet — Breads & Rolls
If you prefer warmed rolls, preheat oven to 150°C (300°F). Wrap rolls in foil and heat for 8–10 minutes before service. Keep warm in a covered basket.
Sandwich Buffet — Fresh Produce & Toppings
Core and slice tomatoes into 1/4-inch rounds. Pat dry on paper towels to remove excess moisture and arrange in a single layer on a platter.
Peel outer leaves from lettuce heads, separate leaves, rinse and spin dry. Stack leaves in a shallow bowl lined with damp paper towel and refrigerate until service to keep crisp.
Peel and thinly slice red onion into rings. Separate rings and place in a shallow bowl of cold water for 10 minutes to mellow sharpness, then drain and pat dry.

Veggie Tray
Wash and trim all vegetables. Cut celery into sticks, slice cucumbers, core and slice bell peppers, and break broccoli into bite-size florets.
Cover with plastic wrap and refrigerate until service. Replace ice/chill tray as needed if holding for long periods.
Italian Pasta Salad
Cook pasta
Bring a large pot of salted water to a rolling boil. Add rotini and cook until al dente according to package directions (typically 9–11 minutes). Drain and rinse under cold water until cool; drain thoroughly and transfer to a large mixing bowl.
Prepare mix-ins
While pasta cooks, dice cucumber, halve cherry tomatoes, slice olives, finely chop red onion, and chop parsley. Cut salami into strips and drain mozzarella if using pearls.
Toss salad
Add salami, mozzarella, tomatoes, cucumber, black olives, red onion and parsley to the cooled pasta. Pour in 3 cups Italian dressing and toss gently to combine. Season with 2 tsp salt and 1 tsp black pepper, taste and adjust seasoning. Chill at least 1 hour before service to let flavors meld.
Before serving, give the salad a final toss and transfer to a serving bowl. Garnish with a little extra chopped parsley if desired.
Potato Chips & Extras
Place potato chips into shallow bowls or baskets lined with paper towels to absorb excess oil. Keep chips covered lightly until service to prevent staling.
Place pickled peppers or pepperoncini in a small bowl with tongs near the chips and sandwich area.
Garnish & Service
Set up buffet line with plates at the beginning and napkins and utensils at the end. Place protein platters and cheese platters first, then breads, produce, condiments, pasta salad, chips and veggie tray so guests build sandwiches logically.
Provide small signs labeling meats, cheeses, dressings (and note common allergens like dairy and gluten). Place sandwich picks available for guests who want to secure stacked sandwiches.
Refresh platters as items run low. Keep perishable items chilled and discard any meat/cheese left out more than 2 hours (1 hour if >32°C / 90°F).
