Cook bacon (if not already cooked)

Cook 6 strips of bacon in a skillet over medium heat until crisp, about 8–10 minutes, turning occasionally. Transfer to a paper towel-lined plate to drain and keep warm.

Toast bread (optional)

If you prefer toasted bread, lightly butter one side of each of 6 bread slices. Toast in a skillet or under a broiler until golden and crisp, about 1–2 minutes per side in a skillet or 1–3 minutes under a broiler—watch closely to avoid burning.

Slice tomato and season

Slice the large tomato into 6 thin slices. Sprinkle the tomato slices lightly with 1/2 teaspoon of the salt and 1/2 teaspoon of the black pepper.

Prepare lettuce and meats

Rinse and pat dry 3 large romaine or leaf lettuce leaves. If the turkey and ham are not pre-sliced, thinly slice them to yield approximately 6 oz turkey and 3 oz ham total.

Assemble Sandwiches

Spread mayonnaise

Lay out 3 slices of bread as the base for each sandwich. Spread 1 teaspoon of mayonnaise on one side of each of these 3 slices (3 tsp total). On the remaining 3 slices (these will be the middle and top layers), spread 1 tsp on each as well so every bread piece has mayonnaise.

Build first layer

On the first bread slice (mayonnaise side up), arrange half of the turkey (approximately 3 oz) evenly, then top with 1 leaf of lettuce and 3 slices of tomato. Lightly season the tomato layer with a pinch of the remaining salt and pepper.

Add middle slice and second layer

Place a second slice of bread (mayonnaise side down) on top of the tomato layer to form the first tier. On top of that middle slice (mayonnaise side up), layer the ham (3 oz) and 3 strips of bacon. Add another lettuce leaf if desired.

Finish sandwich

Top with the third slice of bread (mayonnaise side down) to complete the sandwich. Press down gently to compact the layers.

Trim and secure

Using a sharp knife, cut the sandwich diagonally into quarters (two diagonal cuts to produce four triangular quarters). Insert a toothpick through each quarter to hold layers together.

Serve

Arrange the four sandwich quarters on a platter and serve immediately with pickle spears and potato chips on the side. If desired, provide extra mayonnaise, salt and pepper at the table.
