Method
Prep & Drying
Pat dry and season
Pat the wings very dry with paper towels. Place in a large bowl. Sprinkle the baking powder, salt and black pepper over the wings. Toss to coat evenly — the baking powder helps create a crispy skin when cooked.
If time allows, place coated wings on a wire rack set over a sheet pan and refrigerate, uncovered, for 30–60 minutes to dry the skin further (optional but recommended).
Cook the Wings
Oven Method (crispy baked)
Preheat oven to 425°F (220°C). Line a sheet pan with foil and set a wire rack on top. Lightly brush or toss the wings with 1–2 tbs neutral oil so they are lightly coated. Arrange wings in a single layer on the rack, leaving space between pieces. Bake for 35–45 minutes, turning once halfway, until skin is golden brown and internal temperature reaches 165°F (74°C) and juices run clear. For extra crispness, finish under the broiler 2–3 minutes, watching carefully.
Air Fryer Method
Preheat air fryer to 400°F (200°C). Lightly toss wings with 1 tbs oil. Place wings in a single layer (work in batches if needed). Air fry 20–25 minutes, shaking or flipping every 6–8 minutes, until crisp and cooked through.
Frying Method
Heat 2–3 inches of neutral oil in a heavy pot to 350°F (175°C). Fry wings in batches 8–10 minutes until golden brown and cooked through. Drain on paper towels. Be careful of hot oil and crowding the pot.
Make Sauces
Buffalo
In a small saucepan over low heat, melt the butter. Add the hot sauce and honey (if using) and whisk until combined and warm. Remove from heat.
BBQ
Combine the BBQ sauce and apple cider vinegar in a small bowl and whisk until smooth. Warm gently in a small pan or microwave for 20–30 seconds if you prefer a warm sauce.
Thai Sweet Chili
Stir together the Thai sweet chili sauce and lime juice in a small bowl. Taste and adjust lime to balance sweetness.
Tossing & Serving
Arrange wings on a serving platter with celery and carrot sticks. Serve immediately with blue cheese dressing or ranch on the side.
Leftover wings (if any) can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F (190°C) oven for 8–10 minutes to restore crispness.
