Method

Pork Ribs (St. Louis-style BBQ ribs)

Prepare and Season

Preheat oven to 275°F (135°C). Remove membrane from the bone side of the ribs. Pat ribs dry. Mix kosher salt, black pepper, paprika, brown sugar, garlic powder, onion powder and cayenne in a bowl. Rub ribs lightly with olive oil, then apply the dry rub evenly on both sides. Let rest at room temperature 30 minutes or refrigerate up to overnight.

Bake Low and Slow

Place ribs on a foil-lined baking sheet, meat side up. Combine apple cider vinegar and water and pour a little into the foil well to create steam (about 1/2 cup) or place a shallow pan of liquid in the oven. Cover ribs tightly with foil and bake 2.5–3 hours until meat is tender and pulls back from bones.

Finish on Grill

Preheat grill to medium-high. Remove foil and brush ribs with BBQ sauce. Grill 3–5 minutes per side, basting with sauce, until sauce is caramelized and slightly charred. Let rest 10 minutes, then slice between bones and keep warm.

Marinate

Pat chicken pieces dry. In a large bowl, toss chicken with olive oil, salt, black pepper, smoked paprika, garlic powder, onion powder and honey. Cover and refrigerate for 1–4 hours (or overnight) to allow flavors to penetrate.

Grill and Glaze

Preheat grill to medium (350–375°F / 175–190°C). Grill chicken pieces skin-side down 8–10 minutes, then flip and continue cooking 15–20 minutes until internal temp reaches 165°F (74°C) for breasts or 175°F (80°C) for dark meat. In the last 5–8 minutes brush BBQ sauce on all sides, turning and basting so sauce becomes sticky but doesn’t burn. Rest 5–10 minutes before serving.

Smoked Brisket

Trim and Season

Trim excess fat leaving about 1/4" layer. Rub brisket lightly with yellow mustard as a binder. Combine kosher salt, coarse black pepper, garlic powder and onion powder; apply generously over entire brisket. Let rest 30–60 minutes at room temperature or refrigerate overnight for deeper flavor.

Smoke Slowly

Preheat smoker to 225–250°F (105–120°C). Place brisket fat-side up on the smoker. Smoke for approximately 1.25–1.5 hours per pound until internal temperature reaches ~195–203°F (90–95°C) and probe slides in with little resistance. Maintain consistent temperature, adding wood chunks as needed (oak, hickory or mesquite).

Wrap and Rest

At about 160–170°F (71–77°C) or when brisket hit the stall, wrap brisket tightly in butcher paper or foil with 1–2 cups beef broth to retain moisture (optional). Continue smoking until target temperature reached. Remove from smoker and rest, wrapped, for at least 1 hour (up to 2 hours) before slicing thinly across the grain. Serve with pan juices or extra BBQ sauce.

Make Dressing

In a bowl whisk together mayonnaise, apple cider vinegar, sugar, celery seed, salt and black pepper until smooth.

Combine

Toss shredded cabbage and shredded carrots in a large bowl. Pour dressing over vegetables and toss until evenly coated. Chill at least 1 hour before serving to let flavors meld. Taste and adjust salt/sugar to preference before serving.

Creamy Potato Salad

Cook Potatoes and Eggs

Place potatoes in salted cold water and bring to a boil. Simmer until fork-tender but not falling apart, about 12–15 minutes. Drain and cool slightly. Meanwhile, place eggs in a saucepan, cover with water, bring to a boil, then remove from heat and let sit 10 minutes; cool and peel. Chop eggs coarsely.

Assemble

While potatoes are still slightly warm, combine with mayonnaise, Dijon mustard, sweet pickle relish, celery and red onion. Fold in chopped eggs. Season with salt and pepper, tasting for balance. Chill at least 2 hours (overnight is best). Garnish with paprika and parsley before serving.

Cook Bacon and Aromatics

Preheat oven to 350°F (175°C). In a skillet over medium heat cook diced bacon until crisp. Remove most fat leaving about 1–2 tablespoons. Add diced onion and sauté until soft and translucent, about 5 minutes.

Combine and Bake

In a large ovenproof casserole combine drained beans, cooked bacon and onions, brown sugar, ketchup, yellow mustard, apple cider vinegar and Worcestershire sauce. Stir to combine and season with salt and pepper. Bake uncovered 45–60 minutes until sauce is bubbling and thickened, stirring once halfway through. Keep warm for serving.

Prepare Batter

Preheat oven to 400°F (200°C). Grease a 12-cup cast-iron skillet or two 9x13 pans. Whisk together flour, cornmeal, sugar, baking powder and salt. In a separate bowl whisk eggs, buttermilk and melted butter/oil. Pour wet into dry and stir until just combined; do not overmix.

Bake

Pour batter into prepared skillet/pans and smooth top. Bake 18–25 minutes for a skillet (longer for 9x13 pans ~20–30 mins) until golden and a toothpick inserted into center comes out clean. Let cool slightly, slice and serve warm with butter.

Plating, Serving and Timing

Plan timing so smoked brisket and ribs finish first and rest while chicken finishes on the grill; brisket and ribs benefit from long rest wrapped to stay warm. Keep sauces warm in slow cookers if serving buffet-style. Place coleslaw and potato salad chilled in covered bowls. Keep baked beans in a covered casserole or slow cooker on warm. Slice brisket and ribs right before serving for best presentation. Offer extra BBQ sauce, pickles, lemon wedges and chopped parsley for garnish. Estimated total prep and cook coordination: start brisket the day before or early morning; ribs can be started 4–6 hours before serving; chicken 1–2 hours before serving; sides can be prepared ahead (coleslaw and potato salad overnight).
