Prepare the Fall Squash
Preheat your oven to 200°C (400°F). Peel, seed, and cube the fall squash. Toss with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
Sauté the Mushroom and Garlic
In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the Lion's Mane mushrooms and cook for another 5-7 minutes until golden brown.
Combine Ingredients
Add the roasted squash, white beans, vegetable broth, and fresh thyme to the skillet. Stir to combine and bring to a simmer. Let it cook for about 10 minutes to meld the flavors.
Add Greens
Stir in the mixed greens and cook until wilted, about 3-5 minutes. Season with additional salt and pepper to taste.
Serve
