Whisk eggs

Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk vigorously until mixture is uniform and slightly frothy (about 20–30 seconds).

Preheat pan

Heat a nonstick skillet over medium-low to medium heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. The butter should foam but not brown.

Cook omelette

Pour the whisked eggs into the skillet. Let the eggs sit undisturbed for about 10–15 seconds until edges begin to set. Using a silicone spatula, gently push set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Repeat until mostly set but still slightly glossy on top, about 45–60 seconds total.

Add cheese & fold

Sprinkle 3/4 cup shredded cheddar evenly over one half of the omelette. Allow the cheese to warm for 10–15 seconds, then use the spatula to fold the other half of the omelette over the cheese. Let cook 15–20 seconds more to melt the cheese inside. Slide the omelette onto a plate, seam-side down.

Prepare vegetables

Dice tomatoes to yield about 1 cup, finely dice 1/4 cup yellow onion, and finely dice 1/4 cup bell pepper. Remove seeds from the jalapeño and finely chop 1 jalapeño (adjust if you want more heat).

Mix salsa

In a small bowl combine the diced tomatoes, onion, bell pepper, chopped jalapeño, and 2 tablespoons chopped cilantro. Add 1 tablespoon fresh lime juice, 1 teaspoon olive oil, 1/2 teaspoon salt, and 1/8 teaspoon black pepper. Stir gently to combine and taste — adjust salt or lime as needed. Let rest 5 minutes to meld flavors.

Top the omelette

Spoon the zesty salsa over the folded cheese omelette just before serving, using as much as desired (about 1/3 to 1/2 cup). Garnish with an extra sprinkle of cilantro or a lime wedge if desired.

Select one accompaniment: either a short stack of 2 pancakes, a bowl of soup, or a side salad. Alternatively, choose two other side options (example: breakfast potatoes and toast). Plate the omelette with the chosen side(s). Serve immediately while omelette is warm and salsa is fresh.
