Combine liquids

In a small saucepan, combine 1 cup water and 1/2 cup whole milk. Place over medium heat and bring to a gentle simmer (small bubbles around the edge), not a rolling boil.

Add oats and salt

Stir in 1 cup rolled oats and 1 tsp fine sea salt. Reduce heat to medium-low so the mixture maintains a gentle simmer.

Cook

Cook, stirring frequently with a wooden spoon or spatula to prevent sticking, for 5–7 minutes until the oats have absorbed most liquid and reached a creamy but slightly loose consistency. If you prefer thicker oatmeal, cook 1–2 minutes longer; for thinner, add up to 2 tablespoons extra milk or water.

Flavoring & Toppings

Finish with butter and cinnamon

Remove the pan from heat. Stir in 1 tablespoon unsalted butter and 1/2 teaspoon ground cinnamon until the butter melts and is fully incorporated.

Sweeten

Stir in 2 tablespoons brown sugar (taste and adjust if you prefer sweeter). If using, add 1/4 teaspoon vanilla extract and a 1/4 teaspoon pinch of finishing salt to deepen flavor.

Serve

Spoon the oatmeal into a bowl. If desired, drizzle 2 tablespoons milk or cream over the top for extra creaminess. Sprinkle a tiny extra pinch of cinnamon or brown sugar on top for presentation. Serve immediately while hot.
