Prepare oven and pan

Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan (or line with parchment) and set aside.

Cream butter and sugar

In a large bowl, cream the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 3–4 minutes.

Add eggs and vanilla

Add the eggs one at a time, beating well after each addition. Add the vanilla extract (or vanilla bean paste) and mix until incorporated.

Combine dry ingredients

In a separate bowl whisk together the all-purpose flour, baking powder, and salt until evenly combined.

Alternate flour and milk

With the mixer on low, add one-third of the dry ingredients to the butter mixture, then half of the milk, mixing just until combined. Repeat: add another third of dry, the remaining milk, then finish with the remaining dry. Scrape down the bowl and mix briefly to ensure a smooth batter without overmixing.

Adjust batter consistency

The batter should be moderately thick but pourable. If too stiff, add 1 tablespoon additional milk and stir to adjust.

Bake

Pour the batter into the prepared pan, smooth the top, and bake in the preheated oven for 25–30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Cool

Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before adding any finish or glaze.

Flavors (add to batter)

Select one flavor approach or combine complementary ones (for example lemon zest + vanilla, or espresso + cocoa).

Citrus (lemon or orange)

If using lemon or orange zest (1 tbs), fold the zest into the batter after the flour is fully incorporated. For brighter citrus flavor, add 1 tablespoon fresh lemon or orange juice to the batter in place of 1 tablespoon of the milk.

Coffee/Espresso

Dissolve the instant espresso powder (1 tsp) in 1 tablespoon hot water and stir into the batter after mixing to distribute the coffee flavor evenly.

Cocoa

If using unsweetened cocoa powder (2 tbs), reduce the flour by 2 tablespoons to keep dry ingredient balance. Sift the cocoa with the dry ingredients, then proceed as directed. Cocoa will deepen and slightly thicken the batter.

Spice

Add the ground cinnamon (1 tsp) with the dry ingredients, or sprinkle it into the batter and fold gently for an even spice distribution.

Finish & Garnish

Simple dusting

Once the cake is completely cool, dust the top with powdered sugar (1 tablespoon) using a fine sieve for a light finish.

Glaze or chocolate

If using melted chocolate or glaze (2 tbs), drizzle it over the cooled cake. For a simple glaze, mix 1/4 cup powdered sugar with 1–2 teaspoons milk until pourable and stir in a splash of vanilla if desired.

Garnish

Top the cake with fresh berries or citrus slices (1 cup) arranged decoratively. If you used citrus zest in the batter, place a few thin slices of that same citrus for a matching presentation.

Serve

Slice and serve at room temperature. Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 5 days.
