Prepare avocado spread
Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Add the lemon juice, 1/8 tsp of the salt and 1/8 tsp of the black pepper. Mash with a fork until slightly chunky but spreadable. Set aside.
Prepare tomato and lettuce
Slice the tomato into 1/4-inch (6 mm) rounds. Pat lettuce leaves dry with a towel and set aside. Toss tomato slices lightly with the remaining 7/8 tsp salt and a pinch of black pepper if desired.
Butter buns
Spread about 1/2 tbs of butter on the cut side of each bun half (total 2 tbs). This will help achieve a golden grilled surface.
Assemble cheese on buns
Place two Swiss cheese slices on the bottom half of each bun (so each sandwich will have two slices). If you prefer extra melt, overlap slightly so the cheese covers most of the bread surface.
Grill the sandwich
Heat a large skillet or griddle over medium-low to medium heat. Add 1 tsp olive oil and swirl to coat. Place each bun bottom (cheese side up) in the skillet. Top with the top bun halves, buttered side up, creating an open-face arrangement. Cover the skillet with a lid or inverted metal bowl to help the cheese melt, and cook for 3–4 minutes, checking that the cheese is melting but the bread is not burning. Once cheese has begun to soften, close the sandwich (place top bun on top of cheese) and press gently with a spatula. Flip the whole sandwich and cook an additional 1–2 minutes until the exterior is golden brown and cheese is fully melted. Work in batches if needed.
Finish spread and assemble
Spread about half of the avocado mixture onto the inside of each top bun (or on the bottom bun if you prefer). If using Dijon mustard, spread 1/2 tsp on the other bun half before adding avocado. On the bottom bun (cheese side), layer lettuce (2 leaves), 3–4 tomato slices, and a 1/4 cup of sprouts. Season tomato layer with a light pinch of salt and pepper if desired. Place the top bun (avocado side down) onto the assembled fillings.
Serve
Place the finished Flamingo sandwich on a cutting board and press gently for 10 seconds. Cut in half diagonally if desired and serve immediately while warm, with extra sprouts or a small side salad. Estimated serving: one sandwich per person.
