Method
Omelette
Prepare eggs
Crack 3 large eggs into a bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk vigorously until mixture is uniformly pale and slightly frothy (about 30–45 seconds).
Cook omelette
Heat a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. Pour the egg mixture into the pan and let sit undisturbed for 10–15 seconds until edges begin to set. Using a spatula, gently push set edges toward the center while tilting the pan so uncooked egg flows to the edges. When the top is mostly set but still slightly glossy (about 60–90 seconds), sprinkle 3/4 cup shredded cheddar evenly over one half of the omelette.
Fold and rest
Carefully fold the omelette in half over the cheese using the spatula. Cook for another 15–20 seconds to melt cheese inside, then slide the omelette onto a warm plate. Reduce heat under the pan to low (you'll use it immediately for the sauce).
Chile con Queso (Sauce)
Sauté aromatics
With the same skillet on low heat, add 1 tablespoon unsalted butter. When melted, add 1/4 cup finely diced onion and sauté over low-medium heat until translucent, about 2–3 minutes. Add 1 minced garlic clove and 1 fresh finely chopped jalapeño and cook 30–45 seconds until fragrant. Stir in 2 tablespoons chopped pickled jalapeños and cook 15 seconds.
Make roux and thin
Sprinkle 1 teaspoon all-purpose flour over the aromatics and cook, stirring, for 30 seconds to remove raw flour taste. Gradually whisk in 1/2 cup whole milk and 1/4 cup chicken broth, scraping up any browned bits, until smooth. Increase heat to low-medium and simmer gently for 1–2 minutes to thicken slightly.
Add cheeses and seasonings
Lower heat to low. Add 2 tablespoons softened cream cheese and whisk until incorporated and smooth. Stir in 1/2 cup shredded Monterey Jack and 1/2 cup shredded cheddar a small handful at a time, stirring until each addition melts and the sauce is velvety. Add 1/4 teaspoon ground cumin, 1/4 teaspoon smoked paprika, 1/2 teaspoon salt (adjust to taste), and 1/2 teaspoon fresh lime juice. If sauce is too thick, whisk in up to 1–2 tablespoons additional milk or broth to reach desired pourable consistency.
Finish
Remove sauce from heat and stir in 1 tablespoon chopped fresh cilantro. Taste and adjust seasoning (salt, lime) as needed. Keep warm.
Assembly & Garnish
Place the folded cheese omelette on a serving plate. Spoon the warm chile con queso generously over the top of the omelette so it is well covered.
Garnish with diced tomato, extra chopped cilantro, and sliced pickled jalapeños if desired. Serve immediately with toast, warm tortillas, or your preferred sides.
