Prepare and toast bread

Brush both sides of the bread slices lightly with olive oil (or spread butter, if using). Toast in a skillet over medium heat or in a toaster until golden and crisp, about 2–3 minutes per side in a skillet or 3–4 minutes in a toaster. Remove and keep warm.

Avocado mash

Prepare avocado

Halve the avocado, remove the pit, and scoop the flesh into a bowl. Add the lemon juice immediately to prevent browning.

Using a fork, mash the avocado to your desired texture — slightly chunky or mostly smooth. Season with 1 tsp fine sea salt and 1 tsp freshly ground black pepper. Taste and adjust seasoning; add a little more lemon if you prefer tang.

Tomato topping

Dice tomatoes and shallot

Halve the cherry or plum tomatoes and then quarter (or dice) them into roughly 1/4-inch pieces. Finely mince the shallot or small red onion (about 1 tbsp).

Toss the diced tomatoes and minced shallot with 1 tsp extra virgin olive oil and 1/4 tsp fine sea salt. Let sit 2–3 minutes to marry the flavors and drain any excess liquid if tomatoes are very juicy.

Assemble & garnish

Assemble avocado toast

Divide the mashed avocado evenly between the two toasted bread slices and spread to the edges using the back of a spoon.

Top each slice with the diced tomato mixture, distributing evenly.

Sprinkle about 1 tsp of everything bagel seasoning over each slice (total about 2 tsp). Add a light pinch of flaky sea salt if desired and grind additional black pepper to taste.

Serve immediately with an extra lemon wedge on the side for additional squeeze if desired.
