Prepare and cook lobster

If using a live lobster: bring a large pot of heavily salted water to a rolling boil. Add a halved lemon and 100 ml white wine to the water. Plunge the lobster headfirst into the boiling liquid and cook 6–8 minutes for a 1.25–1.5 lb lobster until shell is bright red. If using tails only, poach in simmering water for 5–6 minutes until opaque. Remove lobster to a bowl to cool slightly. Reserve 200 ml of the poaching liquid and strain it; set aside. When cool enough to handle, remove meat from claws, knuckles and tail; chop tail into large bite-sized pieces and reserve claw meat whole or halved. Save the shells for extra flavor in the sauce (see next step).

If you prefer, you can split the lobster raw before quick-roasting in a 220°C (425°F) oven for 6–8 minutes for extra caramelized flavor; follow same step to remove meat and reserve shells.

Make the lobster stock

In a medium saucepan, heat 1 tbs olive oil over medium heat. Add the lobster shells (cracked) and sauté 2–3 minutes until fragrant. Add 200–250 ml water (use reserved poaching liquid if available) and simmer gently 12–15 minutes to extract flavor. Strain the stock and discard shells; return liquid to the pot and keep warm.

Sweat aromatics

In a large skillet or saucepan, heat 1 tbs olive oil and 1 tbs butter over medium heat. Add finely chopped onion and a pinch of salt and sweat until soft and translucent, about 6–8 minutes. Add grated carrot and cook 2 minutes. Add minced garlic and cook 30–45 seconds until fragrant but not browned.

Build the tomato sauce

Add tomato paste and cook 1 minute to deepen flavor. Add chopped fresh tomatoes (or crushed canned tomatoes), bay leaf, oregano, sugar (if using), tomato frying oil (or extra olive oil), and 120 ml dry white wine. Simmer briskly until wine reduces by half, about 3–4 minutes. Add 200 ml of the warm lobster stock (or reserved poaching liquid) and bring to a gentle simmer. Reduce heat and cook the sauce 12–15 minutes, stirring occasionally, until slightly thickened. Taste and season with sea salt and freshly ground black pepper.

Finish sauce with lobster meat

Add the chopped lobster meat and any juices to the sauce in the last 3–4 minutes of simmering to warm through and let flavors marry. Stir in chopped parsley and remove bay leaf. If sauce becomes too thick, add a splash of reserved pasta water or additional lobster stock to reach a silky consistency.

Cook the pasta

Bring a large pot of heavily salted water to a boil. Add spaghetti or bucatini and cook until al dente according to package instructions (usually 8–10 minutes). Reserve about 250 ml of the pasta cooking water before draining.

Combine pasta with sauce

Add drained pasta directly to the skillet with the warm lobster-tomato sauce over low heat. Toss gently to coat, adding reserved pasta water a little at a time (1–2 tbs) until the sauce clings to the noodles and reaches a glossy, silky texture. Taste and adjust seasoning with salt, pepper, and a squeeze of lemon juice to brighten the dish.

Finish and serve

Stir in the remaining 1 tbs butter for extra gloss and richness, and sprinkle in grated kefalograviera or pecorino if using. Divide among 4 warm plates. Garnish with extra chopped parsley, a light drizzle of extra virgin olive oil and a pinch of red pepper flakes if desired. Serve immediately with lemon wedges on the side.
