In a large pot, heat 5 cups of water to about 160°F (71°C). Add the Pilsner and Crystal malts, stirring well. Maintain the temperature at around 150°F (65°C) for 30 minutes.

Mashing the Grains

After mashing, remove the grains and bring the liquid to a boil. Add Cascade hops and boil for 60 minutes, adding Saaz hops in the last 10 minutes.

Boiling the Wort

Once the boil is complete, cool the wort quickly to about 70°F (21°C) using an immersion chiller or an ice bath.

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and let it ferment at room temperature for 1-2 weeks.

Fermentation

In the last few days of fermentation, add the tomato puree, oregano, basil, and garlic powder. Stir gently to incorporate.

Adding Pizza Flavors

Once fermentation is complete, bottle the beer with a small amount of sugar to carbonate. Allow it to condition for 1-2 weeks before enjoying.

Bottling

Serve chilled, garnished with more oregano and basil if desired.
