    Prep potatoes

    Wash and peel the russet potatoes (peeling optional if you prefer skin-on chips). Using a mandoline or very sharp knife, slice potatoes paper-thin (about 1/16 inch / 1.5 mm). Place slices in a large bowl of cold water as you work.

    Soak and rinse

    After slicing all potatoes, add the 1 tablespoon white wine vinegar or lemon juice to the cold water (optional — helps keep slices from discoloring). Soak slices 20–30 minutes to remove surface starch. Drain and rinse under cold running water until water runs clear. Spread slices in a single layer on clean kitchen towels or paper towels and pat very dry; moisture prevents crisping and causes oil splatter.

    Heat oil

    In a heavy-bottomed pot or deep fryer, pour enough neutral oil to reach about 3–4 cm (1–1.5 inches) depth. Heat oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry chips

    Fry potato slices in small batches so they move freely (do not overcrowd). Fry 2–3 minutes per batch, stirring gently, until edges turn golden and centers are light golden and crisp. If some slices brown too fast, lower heat to 325°F (160°C). Use a slotted spoon or spider to remove chips and transfer to a tray lined with paper towels.

    Season

    While still hot, sprinkle chips with the 1.5 tsp fine sea salt and 1/2 tsp ground black pepper (adjust salt to taste). Let cool slightly — chips will crisp more as they cool. Keep in a single layer to preserve crispness.

House Onion Dip

    Prepare onion

    Finely mince the yellow onion into as small pieces as possible. To reduce raw bite, sprinkle the minced onion with a pinch of the dip's salt and let sit 5–10 minutes, then squeeze lightly in a clean towel or fine sieve to remove excess liquid. Alternatively, rinse quickly and pat dry for milder flavor.

    Mix base

    In a medium bowl, combine 1 cup sour cream and 1/2 cup mayonnaise until smooth.

    Add aromatics and season

    Fold in the prepared minced onion, 1 tsp minced garlic, 1 tsp dried onion flakes (or 1/2 tsp onion powder), 1 tbsp chopped chives, and 1 tsp chopped parsley (if using). Add 1 tsp lemon juice, 3/4 tsp fine sea salt, 1/4 tsp ground black pepper, and 1/4 tsp sugar if desired. Taste and adjust seasoning — add more salt, pepper, or lemon juice to balance.

    Chill and meld

    Cover the dip and refrigerate at least 30 minutes (preferably 1–2 hours) to let flavors meld and the onion soften. Stir before serving and garnish with a few extra chopped chives.
