Potatoes

Method

Preparing the Potatoes

  1. 1

    Wash and Cut Potatoes

Wash the Russet potatoes thoroughly under cold water. Peel the potatoes if desired, then cut them into thin strips, about 1/4 inch thick.

  2. 2

    Soak Potatoes

Place the cut potatoes in a large bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch, which helps in achieving crispiness.

Frying the Potatoes

  1. 3

    Heat Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Dry and Fry Potatoes

Remove the soaked potatoes from the water and dry them thoroughly using a kitchen towel. Carefully add a batch of potatoes to the hot oil and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

  3. 5

    Repeat Frying Process

Continue frying the remaining potato strips in batches, ensuring not to overcrowd the pot.

Seasoning the Fries

  1. 6

    Season the Fries

Once all the fries are fried, place them in a large bowl. Drizzle with truffle oil, then sprinkle with kosher salt, black pepper, and grated Parmesan cheese. Toss well to combine.

  2. 7

    Garnish

Garnish the fries with chopped fresh parsley before serving.
