Garlic Aioli

Make the Garlic Aioli
In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well until all ingredients are fully incorporated. Cover and refrigerate until ready to use.
House-Made Pickles

Prepare the Pickles
In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil over medium heat, stirring until sugar and salt are dissolved. Remove from heat and let cool. Slice cucumbers into thin rounds and add to the cooled vinegar mixture along with smashed garlic cloves and dill. Transfer to a jar and refrigerate for at least 2 hours before serving.

In a bowl, combine ground chuck, brisket, and short rib. Season with salt and black pepper. Mix gently and form into an 8oz patty, making a slight indentation in the center to prevent puffing during cooking.
