Preparation Steps
Make the Honey Simple Syrup
In a small saucepan over low heat, combine equal parts honey and water (1:1 ratio). Stir until the honey is fully dissolved. Allow to cool before using.
Prepare the Glass
Fill a highball glass with ice cubes to chill.
Mix the Drink
In a cocktail shaker, combine the Grey Goose vodka, white peach puree, honey simple syrup, fresh lemon juice, and a sprig of fresh rosemary. Fill the shaker with ice, then shake vigorously for about 15 seconds.
Strain and Serve
Strain the mixture into the prepared glass filled with ice. Top with ginger ale for a fizzy finish.
Garnish
Garnish the cocktail with an additional sprig of fresh rosemary and a slice of lemon, if desired.
