Bacon Fat Washed Bourbon

Maple Simple Syrup

Fresh Orange Juice

Egg Whites

Method

Bacon Fat Washed Bourbon

1

Prepare the Bacon Fat

Cook 4-6 strips of bacon in a skillet until crispy. Reserve 100 ml of the rendered bacon fat.

2

Wash the Bourbon

In a glass jar, combine 750 ml of Old Forester Bourbon with the reserved bacon fat. Seal the jar and let it sit at room temperature for at least 24 hours.

3

Strain the Bourbon

After 24 hours, place the jar in the freezer for 1 hour. Once chilled, strain the bourbon through a coffee filter to remove the bacon fat.

Maple Simple Syrup

4

Combine Ingredients

In a saucepan, combine 1 cup of maple syrup and 1 cup of water.

5

Simmer the Mixture

Heat the mixture over medium heat, stirring occasionally until it comes to a simmer. Simmer for 5 minutes.

6

Cool and Store

Remove from heat and let it cool. Store in a sealed container in the refrigerator for up to 2 weeks.

Fresh Orange Juice

7

Juice the Oranges

Cut the oranges in half and use a juicer to extract juice from all 4 oranges. Strain the juice to remove pulp if desired.

Egg Whites

8

Separate the Egg Whites

Crack the eggs and separate the egg whites from the yolks. Keep the egg whites in a clean bowl.

9

Whisk the Egg Whites

Using a whisk or electric mixer, beat the egg whites on high speed until soft peaks form, about 3-5 minutes.
