Preparing the Fries

Cut the Potatoes

Wash and peel the russet potatoes. Cut them into thin fries, about 1/4 inch thick.

Soak the Fries

Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Drain and Dry

After soaking, drain the fries and pat them dry with a clean kitchen towel to remove moisture.

In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Taste the aioli and adjust seasoning with salt or more lemon juice if desired.
