Prepare the Dough
In a large mixing bowl, combine the flour, baking powder, and salt. Mix well.

Add Butter
Cut in the butter until the mixture resembles coarse crumbs.

Add Milk and Peppers
Stir in the milk, roasted poblano peppers, and shredded cheddar cheese until just combined.

Shape the Biscuits
Turn the dough onto a floured surface and knead gently for about 1 minute. Pat into a 1-inch thick round. Cut out biscuits using a biscuit cutter.

Bake the Biscuits
Place the biscuits on a baking sheet and bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.

Cook the Sausage
In a skillet over medium heat, cook the ground pork sausage until browned and cooked through, breaking it apart with a spatula.

Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes until the flour is absorbed.

Slowly pour in the milk, stirring continuously. Bring to a simmer and cook until thickened (about 5 minutes).

Add salt, black pepper, and red pepper flakes. Stir well and adjust seasoning to taste.
