    Prepare the Eggs

    In a skillet over medium heat, add butter. Once melted, crack the eggs into the skillet. Cook them to your liking (sunny-side up, over-easy, or scrambled). Season with salt and black pepper.

Bacon

    Cook the Bacon

    In a separate skillet, cook the bacon strips over medium heat until crispy, about 5-7 minutes. Flip halfway through for even cooking. Once done, place on a paper towel to drain excess grease.

Roasted Poblano and Cheese Biscuit

    Prepare the Biscuit Dough

    Preheat your oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the shredded cheese and diced roasted poblano.

    Add Milk

    Gradually add the milk to the dry ingredients, mixing until just combined. Do not over-mix.

    Shape and Bake the Biscuits

    Turn the dough onto a lightly floured surface and knead gently. Pat down to about 1-inch thickness and cut out biscuits using a round cutter. Place on a baking sheet and bake for 12-15 minutes or until golden brown.
