Preparation

    Prepare Poblano Crema

    Roast the poblano pepper over an open flame or under a broiler until charred. Place it in a bowl and cover with plastic wrap for 10 minutes to steam. Once cooled, peel the skin off, remove seeds, and chop finely. In a small bowl, mix the chopped poblano with sour cream, lime juice, garlic powder, and salt. Set aside.

    Prepare Avocado

    Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and black pepper. Mash with a fork until desired consistency is reached (smooth or chunky).

    Slice Vegetables

    Thinly slice the tomato and red onion. Set aside.

Cooking

    Cook Egg

    In a non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook until the whites are set, but the yolks remain runny (about 3-4 minutes). Season with a pinch of salt.

    Toast Bread

    While the eggs are cooking, toast the whole grain bread slices until golden brown.

Assembly

    Assemble Toast

    Spread the mashed avocado mixture evenly on each slice of toast. Top with slices of tomato, red onion, and a handful of arugula. Place a sunny-side-up egg on top of each toast and drizzle with the poblano crema. Serve immediately.
