Prepare the Pork Belly

Trim the pork belly of excess fat and slice it into 1-inch thick strips. Season the strips with salt, black pepper, garlic powder, onion powder, and honey. Let it marinate for at least 30 minutes.

Soak the Wood Chips

Soak the pecan wood chips in water for at least 30 minutes to ensure they smoke rather than burn.

Preheat the Smoker

Preheat your smoker to 225°F (107°C). Once the temperature is stable, add the soaked pecan wood chips to the smoker.

Smoke the Pork Belly

Place the seasoned pork belly strips in the smoker. Smoke for 2 to 3 hours, or until the internal temperature reaches 190°F (88°C).

Glaze with BBQ Sauce

During the last 30 minutes of smoking, brush the pork belly strips with the Korean BBQ sauce, allowing it to caramelize slightly.

Serve

Remove the pork belly from the smoker, let it rest for 10 minutes, then slice and serve with additional BBQ sauce if desired.
