Roast the Corn and Jalapeño

Preheat the oven to 400°F (200°C). Toss the fresh corn kernels and diced jalapeño with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 15-20 minutes until lightly charred.

Prepare the Cilantro Crema

In a blender or food processor, combine the sour cream, cilantro, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning to taste.

Bake the Tater Tots

While the corn and jalapeño are roasting, bake the frozen tater tots according to package instructions, usually around 25-30 minutes, until golden and crispy.

Assemble the Dish

Once the tater tots are done baking, remove them from the oven and sprinkle the roasted corn and jalapeño mixture over the top. Then, add the aged smoked cheddar cheese and return to the oven for an additional 5 minutes to melt the cheese.

Remove from the oven and garnish with fresh chives. Serve hot with the cilantro crema on the side.
