Build and stir
In a mixing glass, add 1 oz Pere Mata gin, 0.5 oz Mission gin (or your chosen secondary gin), 1 oz Bordiga Bianco (white vermouth), and 0.5 oz Alpine Amaro. Fill the mixing glass about two-thirds full with ice (large cubes preferred). Stir gently but thoroughly for 20–30 seconds (about 20–30 full rotations) until the mixture is well chilled and slightly diluted (the mixing glass should feel very cold to the touch).
Strain
Discard the ice and water from the chilled old-fashioned glass. Using a julep or Hawthorne strainer, strain the stirred cocktail into the prepared glass over one large clear ice cube or two large cubes.
Garnish
Express the oils from one piece of orange peel over the surface of the cocktail by holding the peel skin-side down about 3–4 inches above the glass and giving it a firm snap so the oils spray out. Run the peel around the rim if desired, then drop the peel into the drink as garnish.
Serve immediately. Sip slowly to appreciate the bright botanical gin, the soft sweetness and aromatics of the Bordiga Bianco, and the herbal bitterness from the Alpine amaro.
